1. I work on the development of Artificial Intelligence-based systems for grading, shelf life prediction and post-harvest storage of fruits and vegetables. Imaging modalities such as RGB, thermal and hyperspectral imaging are the current techniques that have been utilised for the research studies.
2. Novel food processing technologies such as ohmic heating, ultrasonication and related techniques are utilised for the processing of fruit and vegetables. Vegetable waste valorization are currently under investigation.
