Dr Shruti Joshi, is Principal Scientist, working in Grain Science Technology Dept, CSIR- CFTRI. Government of India, PhD in Food Science and Nutrition, with over 14 years of research experience in the field of Food Fortification, Product Development, By-product utilization/Waste valorization and shelf life studies of products. In addition to this also extensively worked on Starch extraction from cereals, its characterization and Modification. Nutrients and nutraceuticals in rice, bio-accessibility and bioactivity through advanced analytical methods.
