The present invention relates to an improved process for induced ripening of banana fruit, wherein eugenol serves as a fruit ripening agent. It serves to ripen mature, green, unripe banana fruits, when exposed to its vapor. The ripening process results in improving the quality in color, softness, flavor generation and sweetness.
