Abstract

The present invention relates to a process for the preparation of a composition enriched with antihypertensive peptides from milk powder. The milk powder contains both casein and whey proteins. The hydrolysis of milk powder is performed by single step by means trypsin. Milk protein hydrolysate composition devoid of unhydrolysed casein and enriched with antihypertensive peptides were obtained by simple and novel fractionation methods using 1-butanol extraction and ultrafiltration. Since milk protein hydrolysate composition is generated in vitro by means of trypsin, antihypertensive peptide composition prepared in this invention is very stable.
